LAMB SHANKS BRAISED IN WINE
 
4 lbs lamb shanks about 1 lb each
2 Tablespoons olive oil
Flour
Salt and pepper
1 lb carrots
½ lb onions
1 lb tomatoes
2 clove chopped garlic
4 cups red wine
1 cup stock
 
Dust shanks in flour and saute in olive oil till browned. Add remaining ingredients in deep sided pan, cover and roast in 350 oven for 2 hours or till meat falls from the bone.  This dish is best if made the day before.  This allows the flavors to merge and the fat to congeal for easy removal.
